Galangal, Greater (Alpinia galanga)
Main species of Alpinia used as a cooking spice, mainly for curries and soups. It has a ginger-like hotness but a sweetly aromatic flavor that is, actually, the predominant flavor in good "Tom-ka-kai" soup that many of you have probably tasted in Thai restaurants. The root (rhizome, actually) also is the source of an essential oil used in flavoring medicinal bitters and liquors. The young shoots are edible and delicious, but rare enough that I always use them for propagation, not gustation. Plants prefer warmth, fast-draining soil, part shade, and protection from frost. They can be grown indoors in the temperate north, and are a great outdoor plant for S. Cal, Gulf coast, HI, etc.

Orders received outside these months will be automatically backordered. If you are ordering plants out of season, you may wish to order them separately from your seeds, in order to streamline the process.
