Herbaceous or in warmer zones evergreen perennial native to Europe, hardy to -15 degrees F. One of the smallest of the mints, it creeps around in moist places and sends up its pretty flowering tops to a height of only about a foot, in the summer.  Pennyroyal makes a bright tea that is well appreciated by many, but it should not be used by pregnant people.

Herbaceous perennial.  Native to China, Tibet and Japan.  Hardy to -30 degrees F but not particularly heat tolerant, so give shade if your summers are very hot and dry.  Growing to about 28 inches, the plant makes a bouquet of large, round, fragrant, cup-shaped blossoms that occur in the late spring.

Rare Mexican Pepper, medium hot with an unusually dark, chocolate brown caste to the bell-like, dangling fruits.  Used mainly in making mole (recipe under "more info.")  I have worked with these in the kitchen, and the taste, color and texture they add to pepper preparations is really quite remarkable.  I put fresh peppers, including a few chilhuacle negro, in the blender, add 1 1/2 tablespoon salt, then sufficient apple cider vinegar to allow the contents to grind up in a nice vortex.  The chilhuacle make the whole preparation smooth and dark brown like chocolate!
